The weather may have other ideas, but if you’ve salads on the mind, how about this easy and quick to prepare dish featuring bacon and avocado? It’s ready to eat from start to finish in half-an-hour.
400g new potatoes
8 back bacon rashers
4 ripe avocados, halved, peeled and sliced
1/2 clove garlic, peeled
1/2 tsp mustard
1/2 tsp balsamic vinegar
1/2 tbsp red wine vinegar
3tbsp olive oil
Preheat the grill. Cook the potatoes in boiling water until just cooked, drain. Meanwhile, grill the bacon until crispy.
Divide the potatoes and avocado between four plates. Cut the bacon into pieces and scatter over.
Mash the garlic with a little salt in a pestle and mortar, then mix in the mustard.
Add the vinegars and stir in the oil. Drizzle the dressing over and serve.
