Go bananas for this ice cream dish
As Fairtrade Fortnight does not end until Sunday, I’m suggesting another dish this week using Fairtrade ingredients – banana ice cream...
ingredients:
3 limes
2 tbsp The Co-operative Fairtrade dark brown sugar
300ml double cream
300ml low-fat natural yogurt
5 ripe The Co-operative Fairtrade bananas
2 tbsp unsweetened desiccated coconut (optional)
Method:
Finely grate the zest from the limes and set aside.
Juice two limes and stir juice into sugar until dissolved.
Whip the cream until it holds its shape. Add in yogurt.
Peel four of the bananas and mash until you have a purée.
Fold the zest of two of the limes, juice, sugar and banana purée into the cream.
Spoon into a lidded freezable container and freeze for 45 minutes, then stir the mixture, refreeze for 45 minutes, stir again and refreeze.
Continue this process for at least four hours.
To serve, top with slices of banana, lime zest and, if using, the coconut (toasted).
Preparation time: 30 minutes
Cooking time: Freeze for four hours
Serves: 8
