Christmas is coming and I’ve given a seasonal feel with this week’s recipe for passion fruit and champage syllabub. I’ll be sharing more festive suggestions with you in the coming weeks...


100ml Champagne or sparkling wine

100g strawberries, sliced

250g mascarpone

4 tbsp icing sugar

4 Co-operative passion fruit, pulp only

200ml double cream

2 tbsp flaked almonds

4 Martini glasses


At the base of each glass, layer a few of the strawberry slices.

In a bowl, add the mascarpone and icing sugar. Pour in three-quarters of the champagne or sparkling wine along with the passion fruit pulp. Mix together thoroughly.

Whip the cream, until peaks form. Fold the cream through the passion fruit mix, along with the last of the champagne.

Spoon into the glasses, and top with a layer of strawberries.

Preparation time: 10 minutes

Cooking time: 10 minutes

Serves: 4
