Cooking up a taste of Spain

INGREDIENTS:
1 onion; roughly chopped
1 red pepper; cored, deseeded, cut into chunks
2 garlic cloves; chopped
400g can The Co-operative chopped tomatoes
1 tsp tumeric
300g The Co-operative easy cook long grain rice
1 litre hot vegetable stock; made with 3 stock cubes
200g The Co-operative cooked and peeled prawns
150g The Co-operative Truly Irresistible British garden frozen peas
1 lemon, cut into wedges
Method:
Put the onion and pepper in a large frying pan with 150ml water. Bring to the boil and simmer for 10 mins until the onion is soft and almost all the water absorbed.
Stir in the garlic, tomatoes and turmeric and cook for 2 mins. Add the rice and stock. Bring to the boil and simmer, uncovered, for 10 mins.
Scatter the prawns and peas over and cook for 5-6 mins, stirring occasionally until stock has been absorbed and rice is tender. Serve with lemon wedges.
