‘Trimmings’ for your festive meal
Continuing my festive-themed recipes in the build-up to the ‘big day’, this week I’m suggesting leek and chestnut stuffing... the perfect accompaniment to your Christmas turkey dinner.
Ingredients:
Parsley
Breadcrumbs
1 Lemon
1 Onion
2 garlic cloves
1 packed of chestnuts
4 rashers The co-operative smoked streaky bacon
1 Leek
Method:
Finely chop one onion, a leek and two garlic cloves in a food processor.
Slowly pan fry four rashers of streaky bacon in a little butter and add the leek mixture to the pan for a couple of minutes.
Remove from the heat. Add a generous handful of breadcrumbs, one packet of chopped chestnuts and zest of one lemon and some chopped parsley. Mix together and keep in the fridge until needed.
Press into an ovenproof serving dish or roll into stuffing balls. Put the stuffing in the oven for 30 minutes.
Accompaniments: why not serve with turkey, British sprouts, British parsnips, roast British potatoes with goose fat, cocktail sausages wrapped in dry cure streaky bacon?
